  • Warm sliced breast of duck with a maple syrup vinaigrette and wild mushrooms
  • Conwy crab cakes with chef’s sweet chilli sauce

Fresh tomato and basil soup with Anglesey sea salt croutons

  • Roasted whole Caerhun hen pheasant stuffed with ricotta and thyme, and garnished crisp dry cure bacon
  • Rack of Welsh lamb with minted hollandaise and a fettucine of vegetables
  • Monkfish wrapped in prosciutto on a bed of creamed leeks

Served with fresh market vegetables and new season potatoes

  • Translucent apple tart with crème fraiche
  • White chocolate pannacotta in a raspberry coulis
  • Panatone and poached nectarines
